You should use dm-crypt to encrypt your home directory including application data. In your case you must always have /Private mounted, so it is always mounted when you are logged it. That does not protect you against any attacker who cracked one of your user applications or against your system administrator. On a single-user system (personal laptop for example) to protect it against thieves dm-crypt is always the better solution.

eCryptFS is designed to have a encrypted space which you can mount easily when you need it. It is designed for example for easily encrypting data on a backup volume mounted over a network. And it is designed to easily access single files and do operations on them which do not need access to the content.</description>
